New England IPA is a light top-fermented beer, often called "hazy" or "juicy". To achieve this effect the right raw materials must be used for production:

  • Water - containing more sulfates and chlorides. Sulfates highlight hops and chlorides provide beer balance - bitterness is counterbalanced by sweetness.
  • Unsweetened raw materials - all kinds of flakes that have higher protein content. They provide beer with body and substance.
  • Yeast - a special yeast strain that makes beer have:
    • Ester/fruit beer profile.
    • Residual sugars make the beer smooth and hazy.
    • Highlights fruity aromas from hops used.

To ensure the hoppy and fruity aroma of the beer, we hopped it several times. During cooking in two portions for the last 20 and 5 minutes, then added on Whirlpool. Last hopping took place on the HopGun 5 days before the bottling.

The result is a juicy beer with a delicate bitterness and velvety sweetness, with a hop and fruit aroma. Did we succeed? Try and decide for yourself!

Ingredients: malt: Pilsner, Oat, Carapils; hop: Magnat, Cascade, Citra; yeast: WLP066 London Fog; other additions: oatmeal.

The base of this beer is New England IPA. We skipped the extra hop in HopGun. In return, we added *NFC blackcurrant juice before bottling. A smaller amount of hops and juice makes the beer have a delicate hop-black currant aftertaste.

*NFC juice – Non From Concentrate: the juice is produced through the pressing process of raw fruit. In our case it is blackcurrant.

Ingredients: malt: Pilsner, Oat, Carapils; hop: Magnat, Cascade, Citra; yeast: WLP066 London Fog; other additions: oatmeal, NFC black currant juice.

COCOA MADNESS

SWEET STOUT

Cocoa madness is a dark beer in the style of Sweet Stout. The taste and aroma of this beer consist of its unique recipe.

Chocolate and caramel malts make this beer comprehensive. Oatmeal gives it extraordinary creaminess. Thanks to lactose*, the drink is sweeter than classic beer styles. However, beer is not always brewed from standard ingredients. What limits us is imagination and taste. We added natural bitter cocoa powder to the pot*. This ingredient gives the balance of sweetness derived from lactose. This makes Cocoa Madness more complex and unbelievably cocoa.

*Lactose - milk sugar that is not fermented by ordinary brewing yeast Fermentis Sefale US-04.

*Alkalized cocoa 10-12% in powder form, subjected to the preparation process. The seeds are pressurized; they are moisturized and subjected to temperature with steam. Thanks to this, cocoa is milder in taste, less acidic, without bitterness, and easier to dissolve. In addition, cocoa has been skimmed to 10-12%.

Ingredients: malt: Pale Ale, Chocolate 1200, Dark Crystal 300, Enzyme; hop: East Kent Goldings; yeast: Fermentis Sefale US-04; other additions: lactose, oatmeal, cocoa.

It’s a heavily hopped Red IPA with fruity aroma and red-copper color. We used to this beer five kinds of hops: Amarillo, Centennial, Chinook, Citra, Columbus.

Columbus, Citra - hops responsible for bitterness in beer. We added them during cooking, thanks to which the compounds contained in hops - under the influence of temperature - were extracted, creating a bitter taste.

Chinook, Centennial, Amarillo - primarily fulfill an aromatic function. Chinook was added to Whirlpool while pouring beer into the fermentation tank. Centennial and Amarillo were added to HopGun before pasteurization and bottling.

Ingredients: malt: Pale Ale, Carafa III Special; hop: Columbus, Citra, Chinook, Centennial, Amarillo; yeast: Fermentis Sefale US-05.

HYBRID TEA IPA

TEA IPA

Hybrid Tea IPA has been brewed on the same base as Hybrid IPA. An additional procedure was adding Georgian tea* to HopGun - before pasteurization and bottling. The amount of hops added to the cooking makes the beer clearly bitter (yeah!).

Of course, everyone has a different sense of taste, the more bitterness - which disturbs us and against which our body defends itself. And here our hero appears - Georgian tea. Its delicate fruity aroma and sweet taste perfectly counteract bitterness and further emphasizes the fruity character of the beer.

*Georgian tea - black tea 100%. This tea comes from the Caucasus mountains. It's intensive but delicate and a little sweet.

Ingredients: malt: Pale Ale, Carafa III Special; hop: Columbus, Citra, Chinook, Centennial, Amarillo; yeast: Fermentis Sefale US-05; other additions: Georgian tea.
